Ingredients:
300g cottage cheese
200g jumbo oats
100g ground almonds
3 large eggs
100g mixed nuts and seeds (e.g. sunflower seeds, pumpkin seeds, chopped walnuts, flaxseeds)
100ml olive oil
2 tsp chopped mixed seaweed (optional)
½ tsp bread soda (bicarbonate of soda)
½ tsp dried oregano
½ tsp ground black pepper
½ tsp ground coriander
½ tsp sea salt
Method:
Preheat the oven to 180°C (350°F), or Gas Mark 4. Line a loaf tin with baking parchment or lightly grease it.
Combine the cottage cheese and oats in a large mixing bowl. Stir well to coat the oats.
Add the remaining ingredients: ground almonds, eggs, mixed nuts and seeds, olive oil, seaweed, bread soda, and all the spices. Mix thoroughly until evenly combined. The mixture will be thick.
Spoon the mixture into the prepared loaf tin, smoothing the top with a spatula.
Bake for 1 hour, or until the top is golden brown and a skewer inserted into the centre comes out clean.
Allow to cool in the tin for 10–15 minutes, then transfer to a wire rack to cool completely.
Slice and enjoy! Delicious served with butter, olive oil, cheese, or your favourite spread.
