
Egg Muffins
Egg Muffins are a great nutritious snack whether you are on the go, or at home. They make for a simple and easy solution for a simple snack. You could also put them together with something else in order to make a substantial meal. Thank us later 😉
Preparation Time: 5 minutes
Cooking Time: 20 minutes
What you will need:
Mixing Bowl
6 cup muffin tin
6 eggs
2 handfuls of washed spinach
6 cherry tomatoes
3 slices of Ham/Chicken/Turkey
1/2 matchbox size piece of cheddar cheese
Salt
Pepper
Turmeric (Optional)
Method:
- Crack all 6 of your eggs into your mixing bowl and whisk together.
- Chop up all your spinach, tomatoes, meat and add to the egg in the mixing bowl.
- Add a pinch of salt, pepper and turmeric to the mixing bowl.
- Grate your cheese into the bowl.
- Stir all the ingredients together.
- Grease your muffin tin with coconut oil or olive oil.
- Add your egg mix to each muffin cup. Make sure the servings are even as the mix will rise when heated.
- Place your filled muffin tin into the oven at Gas mark 6 / 200 Celsius for 15/20 mins.
- After 15/20 minutes the muffins are ready to eat straight away, or let them cool and keep them in the fridge so you can have them as a cold snack.

You can change up your egg muffins by adding lots of different ingredients such as, mushrooms, chorizo, avocado, salmon and many more. Don’t be afraid to get creative and have some fun!
