
This is a delicious Christmas pudding, no sugar added. You can enjoy the rich taste and the body will enjoy the nutritional density:)
Cooking time: 2 ½ – 3 hours
Ingredients:
450g/16oz dried fruit
160g/6oz ground almonds
80g/3oz chopped nuts (pecans, almonds, and hazelnuts work well)
80g/3oz oats,
3 ounces coconut oil,
3 eggs,
1⁄2 pt Guinness
1 medium apple, finely chopped Juice of one orange (or 3 tablespoons of brandy if you are feeling decadent),
1 tablespoon lemon juice 1
2 teaspoon grated nutmeg, 1/2 teaspoon mixed spice, 1 teaspoon ground cinnamon
Method:
Mix together the dried fruit, nuts, and crumbled flakes and oil. Add the Guinness. Add the chopped apple and the orange and lemon juices.
Beat eggs well and stir into the mixture. Mix in the spices. If you like, add any lucky coins (well-wrapped in greaseproof paper — not aluminum foil — to prevent metal poisoning). Place in an oiled, pudding basin that can hold at least 3-1/2 cups of liquid. Make an airtight cover with 3 layers of greaseproof paper.
Put pudding in the deep saucepan. Pour in enough water to come two-thirds of the way up the sides, top up regularly with boiling water. Steam for 3 hours.
