Without action you will not have recovery, so lets start to see the body of yours differently, it is the only thing you have from the day you are born to the day you will leave this beautiful place called Earth, so let look after it, let’s think differently about it, let’s nourish it.

Recipe of the week: Borscht

1 lb raw beetroot, peeled
1 onion chopped
1 carrot, chopped
1 leek, chopped
1 stick celery
6 black peppercorns
1 bay leaf
1 tbsp red wine or sherry vinegar
31/2 pints of beef stock
1 tbsp corn flour
2-4 tbsp fresh lemon juice
Sour cream to serve

Preparation:
Grate 2 beetroot and set aside. Slice the remaining beetroot and combine with the onion, carrot, leek, celery and peppercorns, bay leaf, wine and stock in a large enamel or no-reactive saucepan. Bring to the boil over a high heat, then reduce heat to low and simmer, covered, for about an hour or until the beetroot have faded to a brownish pink and the vegetable are soft. Puree the vegetables and then add the reserved grated beetroot. Cover and simmer over a low heat for 15 minutes, or until tender. Season with fresh lemon juice. Top each portion with a spoonful of sour cream just before serving, can be served warm or chilled.
