Chicken Risotto

This dish is suitable for coleiacs and people allergic to dairy products. It is very simple to prepare and can be made using substitute such as ham, tuna fish, smoked salmon, ets.

Serves: 2

Preparation time: 10 minutes

Cooking time: 15 minutes


 2 chicken breasts

1 green sliced pepper

1 onion cut in rings

1 diced carrot

½ cup of sunflower seeds

6 mushrooms

3 cups of cooked brown rice

1 teaspoon of oregano

1 glove of crushed garlic

2 table spoon of coconut oil


 Heat the oil in a pan and stir-fry the chicken for couple minutes. Add sunflower seeds and onion and the rest of the vegetable and seasoning. Add the cooked rice and continue to stir for approximately 5 minute on lower heat.

Serve with salad of your choice.
